Ice Wine & Warm Feelings
Who’d thought that a lush bouquet of aromas, colors and flavours may lay beneath the ice?
Tonight, I had the privilege and pleasure to taste an Inniskillin Ice Wine (Vidal varietal, 2006 vintage). Harvested in Canada during the coldest, most chilling months of winter at temperatures between -7°C and -5°C, the grapes are carefully crushed so as to extract their very essence, release their precious nectar.
It’s fresh & fruity, you can almost feel snowflakes on your tongue whilst the rich and velvety texture of the wine explodes in mango, lychees, honey and candied-fruit flavours. A sweet intoxicating bliss.
